| All purpose flour

| Grated rind of 1 Florida Orange

| Fresh Florida Orange Juice (about 2 oranges squeezed)

| Shortening, melted
| 1/4 cup |
| Orange Marmalade
| 3 tbsp. |

Method
Preheat oven to 375°F. Butter a loaf pan well. Set aside.
In a bowl, sift together flour, baking powder, salt, and sugar. Add the orange rind and mix well. In another bowl, lightly whisk together eggs, orange juice and shortening. Stir wet ingredients into the flour mixture until just moistened. Spoon into the prepared loaf pan carefully. Spread the orange marmalade on top of the batter, and bake in a preheated oven for 30-35 minutes or until an inserted toothpick comes out clean.
Cool for about 10 minutes, then turn out and cool completely on a cake rack. If desired, spread more orange marmalade over the bread.
